Why Is Cheesecake So Good?

Cake and cheese. Perhaps two of the most loved delicacies in the entire foodie hemisphere. Put them together and you get a creamy, luscious sweet treat that is enjoyed by millions of fans the world over. I don’t know about you, but I think cheesecake has got to be up there as one of the greatest desserts ever created.

Whenever I make a cheesecake, it always seems to be a guaranteed crowd-pleaser. At Christmas time. Serve this bad boy up anytime, anywhere, and I bet there will be plenty of grinning faces queuing up for a slice of your tasty creation.

So gracing our table for Christmas is Delicious Davidson Plum Cheesy Cake.

Ingredients Base

  • 50 g butter, plus extra for greasing

  • 100 g Macadamia's

  • 100 g Pine Nuts

  • 2 tbsp desiccated coconut

  • 2 tsp ground roasted wattleseed

  • 3 tsp honey

  • ½ tsp ground cinnamon myrtle


  • 250 g Condensed Milk

  • 400 g pouring (whipping) cream

  • 120 g honey (see Tips)

  • 1 tsp natural vanilla extract

  • 2 tbsp hot water

  • 3 tsp gelatine powder

  • ½ tsp Davidson plum powder (optional - see Tips)

Jelly topping

  • 125 g fresh Lilly Pillies, plus extra to serve

  • 250 g fresh Quandong, hulled, plus extra to serve

  • 2 tsp Davidson plum powder

  • 20 g honey

  • 1 ½ tbsp gelatine powder
