Savoury Bush Tukka Galettes By Avalon Karatau. 4th of November 2022. We are seeing Christmas everywhere in the shops now. The festive calibrations are just 51 days away. Christmas is all about Summer in the southern hemisphere. Whether your silly season flavour is a stinking hot day, breezy arvo or a balmy evening, we will be sharing a few simple ways to enjoy some very Australian flavours in your holiday luncheon in the next coming weeks leading up to Santa coming down the chimney.
Ingredients:
60g Butter
2 tbsps. of Manuka Honey
1/4 tsp of Cinnamon Myrtle
2 tsp of finely chopped Wrangle greens
1/4 tsps of mountain pepper berry
2 large pears 660g, cut into thick wedges
2 sheets frozen puff pastry
1/2 cup chopped onions
1 egg beaten lightly
100g blue cheese, crumbled, plus extra to serve
6 sprigs native oregano
plus extra to serve.
1/4 cup roasted Macadamia nuts, chopped coarsely
1 tbsp. extra virgin olive oil
Preheat oven to 200 degrees. Place two lightly oiled oven trays in the oven to preheat.
Heat butter and honey in a small saucepan over medium heat until just melted. Transfer to a medium heatproof bowl stir in cinnamon , Warrigal Greens, and mountain pepper berry. Add pears toss until well coated.
Cut 23cm round from each pastry sheet place each round on a piece of baking paper. Spread onion relish evenly over pastry rounds leaving a 3 cm boarder. Brush the boarder with a little of the egg. Fold and tuck in pastry edges to create a rim. Carefully lift pastry on paper onto heated tray. Working quickly arrange pears evenly on relish, drizzle with any remaining honey mixture, Brush rim with a little more egg.
